Champagne Vignon Père & Fils is a family Champagne House exploiting almost 7 hectares, essentially on the Grand Cru soils of Verzenay and Verzy. Their vineyard will soon be certified as Haute Valeur Environmentale (high environmental value).
The soils are elaborated and the vineyards are grassed. Non-toxic and non carcinogenic methods are used to protect nature, the future generations, and to fully respect the identity of our soils.
From this perspective, the old vines, often in mass selection, are separately converted into wine, if possible without chaptalization (adding sugar), but with the natural yeasts of Verzenay's soil, in oak barrels or lees and without clarification nor filtration.
Above all, Champagne is a wine and nature decides! We perform our fermentation and wine making processes with the utmost respect. Only a few blends are elaborated in this way, favoring the authenticity of the soil of one or more plots, situated together on the veins of the soft chalk or clay with flint, preserving the uniqueness and expression of a soil in 1 year.
To guarantee this expression, we always search for balance in our dosages. This is generally found in the Extra Brut that reveals the aromas of natural wines.
