These majestic Gallo-Roman chalk quarries, part of the UNESCO World Heritage Site "Côteaux, Maisons et Caves de Champagne," have been used since 1804 for Champagne production and aging.
Today, the galleries, with a storage capacity of 2 million bottles, serve as cellars for Balincourt's finest wines. The Champagne is stored in darkness at a constant temperature (10°C) and humidity, ensuring perfect maturation.
